The product of a perfect Mediterranean climate, this wine is made solely from Vermentino grapes, harvested by hand between the end of August and first week of September. After gentle pressing, fermentation takes place in temperature-controlled stainless steel tanks. The wine is then left to rest until the following spring. After a second fermentation in the bottle, maturation is completed with at least 18 months on the yeasts, with a further 2 months after disgorgement. It has a deep straw yellow colour, and a fine, persistent mousse. Elegant aroma with hints of bread crusts typical of the Champagne method. Well-structured but fresh and minerally on the palate, with good acidity. In mouth: minerality is evident, with good acidity
